Per wikipedia,
about 12% if the return team is setup for "onsides defense"
about 50% if the return team is caught unaware.
Here's another thought:
How does a team attempting onsides kicks when they aren't "supposed" to affect the return average for their opponents against them when they do a normal kick? If the threat of an onsides kick lowers their return average a few yards, that can weigh heavily.
