I'm completely new, and was wondering the best book for a U.S. player. The book can not set limits if you are winning.
I was considering 5dimes vs. Greek, but all suggestions are welcome.

First off, Let me welcome you to the SBR forum
Of the two choice your considering I would most definitely go with 5Dimes instead of thegreek. That is if will be betting baseball.

Both books you mentioned have paid like clockwork.
If you bet $500 or less, 5dimes is probably better. They have a better selection of tennis and props, but lower limits as well.
If you want to bet larger, Olympic is probably better.
