I don't think any team will want to defer the ball, I think who ever wins the toss takes the ball to try and score first... But that's just IMO.

Neither can I but that is the only explanation I can come up with for why a coin flip odds prop would be getting that much action on one side.

Not up currently. For some strange reason SBR is afraid to take $7 bets on these props overnight while real books leave $500+ limit props open 24/7.
